Berry Cream Cake

Vegan Berry Cream Cake

It's Friday so I'm in the mood to break breakfast rules, and this is what I have to show for it: A not-so-guilty yet unbelievably sweet, berry cream cake.  Best part? It's vegan. #SCORE Here's what you need berry lovers: 

Base/Crust: I used leftover base from my Dark Chocolate cake  but if you want to ditch the chocolate flavor here's what I recommend. 

  1. Macadamia 
  2. Dates
  3. coconut oil
  4. Agave or any other sweetener  

Blend all ingredients together in food processor and press to bottom of spring pan. 

Cream filling 

  1. Coconut Cream 
  2. Soaked cashews (at least one hour unless you want a more grainy texture/ can substitute for almonds as well) 
  3. Agave ( I used some maple syrup too)
  4. Lemon Juice 
  5. Vanilla Extract

Pour first layer in spring pan.  Then add a layer of berries of your choice (I used raspberries and blueberries) Add last layer of cream filling on top, covering the fruit.  

Garnish with cacao nibs & blueberries and dig in!
