Dark Chocolate Raspberry Dream Cake

Its almost Valentine's day.. Some people love it, some people hate it.. but everyone loves cake! This guilt free piece of chocolate heaven is sure to impress your loved one, or just make you feel better about spending valentine's day alone so you don't have to share this thing with anyone- trust. 

I'll be honest, I'm terrible with measuring my ingredients.. I just kind of add amounts of each ingredient as I go.  Here's what I used: 

Base/Crust: 

  1. Dates (Lots of that)
  2. Soaked almonds 
  3. Coconut oil
  4. Cacao Powder
  5. Agave or Maple Syrup (I put a little bit of both)

Blend ingredients in food processor and press unto the bottom of your spring pan. 

Cake "batter"/ middle layer

  1. Soaked Almonds (Cashews are definitely creamier, I just used almonds because my mother is allergic to cashews. For a nuttier texture you can add pecans or almonds!) 
  2. Vanilla Extract 
  3. Lemon Juice
  4. Soaked dates
  5. Coconut Oil - this is going to help bind the cake together when refrigerated 
  6. Maple syrup &/or Agave
  7. Cacao Powder
  8. A pinch of sea salt 
  9. Non-Dairy milk- Add as much or as little in food processor until you're left with a thick creamy consistency.

Blend ingredients together and pour mixture into spring pan on top of your crust.

Chocolate Ganache / Top coat

  1. Coconut Oil
  2. Cacao Powder
  3. Agave or any other liquid sweetener of your choice 

The ganache is where you're really going to get that dark chocolate flavor. I added a little kick to mine by adding a hint of lemon juice just because I like the bitterness of dark chocolate.  

Garnish with cut up frozen raspberries, walnuts, cacao nibs & whatever else your pretty little heart desires. 

Store in the refrigerator until firm and you're good to go!
